One other less conspiratory explanation is that your bill was mis-delivered to someone else and they took their time to drop it back in the mail, perhaps because they were out of town when it arrived at their house.
It's happened to me both ways. Of course I felt bad when I returned from a 3 week road trip and found someone's bill in my pile of mail.
I switched from AT&T to Verizon years ago because of better coverage in rural Colorado and Wyoming.
Text and/or email notices that a bill is ready, even if you elect to pay by mail, are a good safety measure.
